Day 31

Weigh in Wednesday and ecstatic with my 1.1kg loss this week. That's a total of 3.6kgs and almost 5% of my body weight in 31 days!! I really upped the ante this week by doing a double shot of exercises a day (DVD in the morning and Outdoor workout in the afternoon) and I've been drinking a lot more water. It looks like those changes are paying off!! Ker-ching!


Breakfast:
Breakfast "Frittata" with Avocado Toast


Please excuse what this looks like. I couldn't have been bothered faffing with frittata this morning so I just loosely "scrambled" everything. Same calories, same taste, just a different method of cooking and presentation! Oh and I left out the extra egg white. Until I work out what to do with the leftover yolks, can't bear to bin it!








Lunch:  
Salmon and Avo Wrap

This was super yummy, but super clumsy to eat. What's the secret to transporting wraps? I packed my ingredients in a container, rolled the wrap in a ziplock bag and assembled it at work at lunch time but the wrap split everywhere (as you can see!).

Also, there seems to be 2 versions of this wrap going around. My wrap has wholegrain mustard, avo, rocket, grated carrot, red salmon and dill. The recipe that's up now has cucumber, capers and ricotta.... I must have printed mine before they made the change.








Dinner:
Mexican Style Shepherd's Pie

Did you know that Shepherd's pie is made from lamb mince and Cottage pie is beef mince? So technically this should be a Cottage Pie! LOL. This took quite a while to prepare and cook but it was worth it, very very tasty! I added fresh coriander because I adore it and a cherry tomato for good measure. Nice recipe to cook up on a weekend and freeze for those busy nights.

  1. YUM! The Mexican Shepherds Pie is one of my favourites - and the boyf loves it too! (haha he doesn't know how little meat is actually in there). A good way to hide vege's huh?!

  2. I know, it's GREAT!! And true, there is so little meat in it. My hubby started cooking it before I got home (thankfully cos it takes forever) and he said he had to read the recipe twice to check the meat allowance was correct. Didn't miss it at all! Hope your 12wbt is going well! :)
