Day 27

Breakfast:
Berry Muesli


I forgot to defrost my 50g of berry mix overnight so I have to wait a bit before I can enjoy this. Must find out what those small red berries are? They're so pretty.









Lunch:
Plonkey's Antipasto Pizza
I was going to make last night's pizza again for lunch today but there was no proscuitto or ham so I used the opportunity to use up some of the yummy goodies in the fridge. This pizza comes out at 295 calories: (ingredients below serve 1)
Lightly spray edges of base with olive oil
30g ricotta, mixed with half a tsp of black olive tapenade, 4 cherry tomatoes
40g drained artichokes, sliced, 10g sundried tomatoes chopped, 10g capsicum strips (not oil based), 2 pitted olives chopped coarsely
Bake in 220 degree oven for 8-10 mins. Top with basil and rocket.


Dinner:
Linguini "Marinara" with Lemon and Chilli

Tomorrow is a big red flag day for me - we have friends coming around for a BBQ lunch so I decided to have the Linguini "Marinara" for dinner tonight. I'm not confident buying or cooking seafood so I didn't use a marinara mix in this, I just used tinned salmon and it was great. Hubby said it was "fine" ... pfft what does he know! LOL. I found this lovely 3-colour linguini which also made the dish quite interesting. Treat meal allows for 600 cals so I had a slightly larger portion .... nice!

  1. I believe the smallest berries are cranberries. :) I only know that because I actually don't like them haha and the mixed berries I recently bought had them in them, so I have to pick them out.

    Also I just realised I can comment on your posts, I LOVE your blog, not only are you committed 100% to the program, you are 100% committed to your blog and keeping it updated for all of us. :3 Great job!

  3. I microwave the frozen berries to defrost them! Makes life a little easier!

  4. Ah what a great idea. Why didn't I think of that. I just assumed it would make them hot but I guess it's just a zap? Will try that next time! Thanks for the tip :)
