Day 21

Three full weeks on the program today, so hard to believe! Feels like just yesterday when I was constantly refreshing, waiting for that magical Week 1 button to turn blue!! And the excitement I felt that day, I wish I could bottle that feeling. So we enter Week 4 tomorrow and from what I hear, it's one of the harder weeks because the excitement has died down and we're knuckling down to some hard work, ie welcome to reality. Bring it on, I'm so ready!

Breakfast: 
Roast tomatoes with basil ricotta

This cholesterol friendly Sunday brekkie is very similar to my favourite Big Breakfast at the local cafe, just minus the 2 runny eggs and mounds of crispy bacon. Strangely I didn't miss the bacon and eggs this morning (maybe it's because I'm not hungover?) and this was filling and tasty enough on its own. My heart hearts this breakfast!







Lunch:
Turkey, cranberry and avocado sandwich

Turns out hubby had been snacking on rice cakes in the week and there were none left for lunch today. No biggie, I just had a sandwich instead.










Dinner:
Prawn and Feta Pizza

Wow, talk about a flavour sensation. This was amazing. The lemon zest is perfect with it! The only thing I may do differently next time is lightly spray the base with oil as the edges burnt and it was quite dry and crispy. Otherwise, great meal. I'm glad I tried because to be honest, I had my doubts.
